The Restaurateur Club enjoyed making pizza on Saturday at the classic Italian pizzeria, Nicoletta Restaurant. The chefs explained their home-friendly dough recipe, the proofing and rising process, and the complexities of a quality pizza oven. In the classy yet relaxed dining room, the chefs then demonstrated to the 20 club members how to transform a 14 oz ball of dough into a personalized pizza, with a defined crust, plenty of mozzarella cheese, and as few or as many toppings as each person liked. A few minutes in the 600 degree brick oven transformed the creations into delicious pies, ready to enjoy beneath the restaurant’s vast sunny windows. This interactive experience reflected the NYU spirit of creativity, and supplied 20 pizzas that members were proud to bring home afterward.
